At the foot of Mt. Kaikoma, seasons unfold in slow soft shifts. The mountain alters its palette, light reflects upon the water, and time is reflected in the brewery’s koji and rice alike. A night at esoto evolves alongside the seasons. No two moments here are ever the same. Each experience is a personal moment to be treasured, for you and you alone.

Spring

March-May

Snowmelt cascades down Mt. Kaikoma, transforming the rice fields into soft mirrors of water. Cherry blossoms break into bloom along the mountain’s edge, and a faintly sweet breeze drifts past the brewery doors. After the long winter, this land breathes with life once more.

Summer

June-August

Young rice shoots reach toward the sun and turn green as the song of the Ojira River rings out clear and true. The brewery’s stone walls offer a cool refuge, the bathwaters run pure and crystalline, and the sky opens wide into deep summer blue. Summer in Hakushu is a time when water, light, and verdant green weave together in quiet perfection.

Fall

September-November

Hands work methodically through gilded paddy fields. Midway up Mt. Kaikoma, fall paints the slopes in scarlet and gold, deepening the lines of the landscape. The year arrives at its richest moment of taste and color—just as in the brewery, quiet preparations for the winter brewing begin.

Winter

December-February

Mt. Kaikoma dons a mantle of snow, and the winter air turns crisp and clear. Sliding open the brewery doors releases the warm sweet scent of koji and a soft veil of steam. This is the season when three centuries of papermaking and brewing heritage move most vividly of all. As the world outside falls silent, a quiet flame burns within.
